Cottage Cheese and Broccoli Pie

I have a tendency to buy these big packs of cottage cheese, and I like to eat it plain or with some veggies. Eventually I do get tired of it, and didn’t know what else you could do with cottage cheese. I played around a bit and made this cottage cheese pie in a spring form. This is just the most delicious thing! The consistency was great, and the flavor was delicious! Erik and I did not have left overs for long, we were like two little mice sneaking into the kitchen and polishing off the pie one nibble at a time!

Cottage Cheese and Broccoli Pie

about 1 lb (500 g) container of cottage cheese

1 lb (500 g) of thawed broccoli (or pre-steamed)

3 eggs, beaten

2 tbs flour

salt

1 pinch Cayenne Pepper

1 pinch Paprika powder

1 tsp Course ground black pepper

1 tsp Salt

Parmesan, shredded

Pie Crust

  1. Mix together eggs, flour, cottage cheese, and spices.
  2. Place broccoli in the pie crust and pour over the egg mixture.
  3. Sprinkle the shredded parmesan over the pie and bake at 350 (175 C). The paj is done when you can shake it and it no longer jiggles. Let rest.

You could really buy ready made savory pie crust, but there is a recipe from Martha Stewart just in case you felt like making it yourself! As you can see in the pic above, I only made pie crust for the bottom and not the sides. The first time I made this I added maybe 1/2 cup of cheese cubes, which you can do but I am not sure it needs it. Also, adding bacon bits is delicious as always.
