Beef a la Rydberg

So it is Sunday, I start my surgical rotation tomorrow at school and I am looking for one more day off before the madness begins. That’s why I am making the yummiest lazy day hash. This is really common bar food and is completely delicious and easy to make. We had boiled potatoes that we ate with some steak last night for dinner, I just used those left overs and tossed them in the pan with some butter and the herbs. The classic recipe doesn’t really call for halloumi, but I had a bunch of it at home and it was really great with it!

Beef a la Rydberg

1 lbs beef in bite-size cubes or strips

8 medium-sized potatoes

1 large yellow onion, diced

1 package halloumi cheese (optional but so good)

1 egg yolk per serving

salt, pepper, rosemary and parsley to taste

  1. Cut the potatoes into about the same size as the beef, around 1/2-1 inch cubes. Rinse the potatoes.
  2. Fry the halloumi until golden brown on each side, set aside. Don’t bother rinsing the pan just let it get really hot and add the meat until brown and as done as you would like it. allow the meat to rest.
  3. Add the onions in some oil and butter to the pan, add the potatoes. Season with salt, pepper, rosemary and parsley to taste. When the potatoes are done add the meat and halloumi back, toss everything to mix the flavors and serve immediately with the egg yolk on top.
