Caviar Cups

This is always a huge hit at any party, colorful as well as delicious! My mother started making these, and everyone that has ever tried them has started making them too. These taste the best when you use a large roe, we usually use rainbow trout roe. First mix crème fraîche, chopped chives, salt, course ground pepper, lemon juice, and lemon zest if you would like more citrus flavor. Use a crunchy cracker cup (the thinner the better) or a bread cup, fill with the crème fraîche mix and top with rainbow trout roe. Serve, preferably with well-chilled champagne 🙂
