Homemade Chicken Sausages

My father and I decided to get out the meat grinder and try making our own mince, I had really been wanting to try this after having been in Texas all spring and witnessing the “pink slime” debate. That was just more than I ever needed to know and gave me the final nudge I needed to dig up an old meat grinder we had lying around the house and give it a crank. We have a Porkert meat grinder and sausage maker, which as you can read in the review was just a total bust. We ended up only using the grinder, giving up completely on the notion of being able to use it to make sausages which we instead ended up doing with a disposable piping bag and lot of team work. We did two different flavors, one mild and one spicy, which you can see since the spicy one turned out a little darker.

Chicken sausage with sage and apple

½ chicken with fat, ground

½ yellow onion, chopped

½ apple, finely chopped

8 sage leaves, chopped

2 tsp salt

1 tsp Pepper

Moroccan chicken sausages with cranberries

½ chicken with fat, ground

½ yellow onion, chopped

3 tbs dried cranberries, chopped

2 tsp moroccan spice rub

1 tbs chipotle paste, or to taste (½ for a milder flavor)

2 tsp salt

1 tsp Pepper
